Creamy Lime and Basil Dressing
1 clove garlic
1 tablespoon size chunk fresh ginger
1/2 cup raw almonds
1/4 cup raw sunflower seeds
1 lime, juiced
2 dates, soaked if hard
1 teaspoon cold pressed flaxseed oil (optional)
Sea salt, to taste
1 to 2 large fresh basil leaves
1/2 cup water, or as needed
I made this in a VitaMix, so it got really nice and creamy. If you don't have a VitaMix or other powerful blender, you can use a regular blender. You might need to run it longer.
1) Place all ingredients except for the salt, basil, and water into the blender container and process until the almonds and seeds are finely ground and the mix is smooth. Add water, about 1/4 cup or so, and blend, checking for consistency and adding more water, as needed, to get the dressing to a desired consistency. Run the machine for about a minute on high speed to get is nice and smooth/creamy.
2) Once it is how you like it, add the basil and a little salt and blend in. Taste and add more basil/salt if you want. I don't like things very salty and used about 3 small pinches of sea salt in my batch.
This is good for making raw slaws or anything else you can think of.
