Creamy Oatmeal with Maple Syrup

What you need: 

1/2 cup quick oats
1/2 cup water
1/2 cup light soy milk
1 teaspoon vanilla
1/2 teaspoon cinnamon

What you do: 

Place all ingredients in a small pot. Bring to boil slowly over low-medium heat, stirring occasionally. When it begins to bubble turn the heatdown to low and allow to thicken. Cool for a few minutes and add whatever you like!
I use 1 tablespoon no sugar added maple syrup to sweeten plus a splash (about 1 tbsp) per 1/2 cup.
This can serve 2 if you have toast and fruit with it. I usually eat the whole cup with a handful of grapes and skip the toast.
