Creamy Peanut Kale
What you need:
1 tablespoon vegetable oil
1/3 onion, chopped
1 garlic clove, chopped
1/4 cup natural peanut butter
2 tablespoons Bragg's Liquid Aminos
1/4 cup vegetable broth or water
1/2 teaspoon coriander
1/4 teaspoon chili powder
1/4 teaspoon cumin
1 bunch kale, chopped
What you do:
1. In a pan, heat vegetable oil. Fry garlic and onions, until translucent. Meanwhile, in a bowl, mix peanut butter, Bragg's, broth/water, and spices until the peanut butter has dissolved, and it has turned saucy.
2. Add kale to the pan, and cook until the leaves are dark green and wilted.
3. Add the peanut butter sauce to the pan. If it is too dry, add broth/water to reach desired consistency.

SO HOW'D IT GO?
:D this was so good! i officially love kale. i used whole wheat linguine and i wish i would have used soba noodles or right. the linguine was too bulky and rich. i put yellow squash and red pepper in it. i also added soy milk to the sauce and it make it super creamy. i added lime juice also to give it some tang. SUPER GOOD!
This is wonderful. It's the only way I've been able to get my family to eat kale. I teach a college-level nutrition class that involves cooking, and I included this recipe in my "greens cooking day." It was fun to watch students taking very careful bites with very skeptical faces and seeing the faces turn to surprised delight.
Great recipe! I added red pepper & a handful of bean sprouts, then served it over soba noodles with a sprinkle of toasted sesame seeds. I'm also a great fan of thai sweet chili sauce, so subbed that for the chili powder. ;)b
yay! this was great! so easy so tasty. halved the soy sauce added a little maple syrup to make it a bit sweeter. it was perfect. served it over brown rice.
i made this. i used mung bean noodle threads to go with it. it's delightful.
I had this for dinner tonight, it was great!! First time having kale, and other than not liking the stems, it was pretty good. Next time I will definitely double the sauce, cause I love saucy stuff. I served it over thin spaghetti, and it was fabulous. Thanks!!
i made this for dinner tonight and my son ate it all up!! it was a little salty for me, but the flavor was fantastic! i didn't have any corriander, so i used garam masala instead. it was yummy!
YUMMY! EASY AND WONDERFUL!!!
The sauce was a little thick for my taste, so next time I'll cut it down so its not such a heavy peanut taste. The kale in my garden is only starting to grow so I mixed it with some swiss chard which was equally tasty. Next time I'll experiment with adding more vegetables and the crunchy pb idea sounds really good!
We love this so much! I use soy sauce..and added a little sesame oil, no coriander, and used pasta water!
This was deelicious! I didn't have peanut butter so I used organic tahini instead and it was so yummy. I added some shredded red cabbage and used cayenne to make up for the lack of chili powder. I served it on top of rice noodles. This recipe is awesome and so easy! Thanks!
