Creamy Potato Alfredo

What you need: 

3 heaping tablespoons margarine
5 garlic cloves
vegan vegetable bouillon
1 stalk green onion (scallion)
dash of Braggs Amino Acids
1/2 cup diced potato
1/2 cup chopped carrots and peas
2 cups soy milk
1 tablespoon cornstarch
1 pack fettucini or your fav pasta

What you do: 

This is DEE-LI-CIOUS!
In a saucepan, boil diced potatoes until soft. Drain & set aside. Sautee vegam margarine, garlic, scallion, veg boulion, diced potatoes, carrots and peas. Add a squirt of Braggs liquid aminos and soy milk. Mix out cornstarch in a bit of water and add to the mixture until it has a creamy consistency. Serve over your favorite pasta (I like fettucini with this).

We added half a block of tofu and the result was super thick and delicious.

This is pretty good.  It took me a half an hour easily, so I'm wondering how long it actually takes everyone else!  It seemed to take forever to thicken up, and it never got as thick as I expected, so I just ate it anyway.  :)  I didn't have scallions on hand, so I used fresh parsley at the end instead.  I also subbed soy sauce for the Braggs.  This is something I'd definitely make again, just altered here and there.  :)

I made this last night! It's pretty tasty! I had to use a sweet potato because I had no regular potatoes. Thanks!  ;D

Def. half if not cut out the garlic.  So much garlic it made me sick.. couldn't eat a whole lot of it in one sitting.  Not too bad though.. needs a bit alterations.

FYI:  This review is NOT for this recipe!  It is for a mac n cheese recipe.  I'm sorry!

I absolutely LOVE this recipe! It is great and tasty, and it is easy to modify more to your tastes. I added a little more seasonings. If you are a pasta lover then you must make this!
