Crepes with Homemade Orange Syrup

What you need: 

1 cup unbleached flour (whatever works for you)
1 1/2 cups soy milk
1/4 cinnamon
pinch baking soda
1/4 vanilla
1 teaspoon brown sugar
nut meg
2 to 3 orange peels
orange slices
1/8 to 1/4 cup sugar or Stevia (to taste)
a little water
flour to thicken

What you do: 

Mix all dry ingredients for crepes then add soy milk...mix...mix...and mix try getting rid of most clumps. :)
Then for sauce:[br] One orange ---or depending on how many servings your making; but for 1 or 2 just use 1 orange. In saucepan, add a little water with flour, surgar (or Stevia), the 2 to 3 orange peels and the orange slices..(btw Peel the orange first. lol) and let it simmer away till done :D

These were pretty good.  Upon pouring the batter onto the pan, it wasn't smooth like other crepe batters.  I spread it out with my spatula, and it cooked nicely anyway.

With the orange sauce, I used blood oranges--simply divine.  I added some mango chunks at the end and let it simmer for about five minutes.  It was a fantastic decision. 

Overall, I'll definitely be using the sauce recipe again.  I might tinker with the crepe batter, though.  Thanks for posting!

I put a little nutmeg and powdered ginger into my crepe batter, and a couple of spoons of sweetened soy yoghurt. The syrup is a little sweet for my tastes. I may add less sugar and more thickener next time. :)

A trick I found for turning the crepes without smushing them with the spatula... shuffle the pan from side to side until the crepe moves to one side, then come at it from the opposite side - you'll have enough room to get under the edge. ;)b
