Crunchy Kale Snack

What you need: 

2 cups of kale (washed, dried and torn into bite sized pieces)
olive oil cooking spray
sea salt and fresh ground black pepper to taste

What you do: 

I discovered this yumminess by accident one day when I ran out of room on the stove and tried to use the oven to saute my kale. I then forgot about it and this is the tweaked result.
Pre-heat oven to 350.
Lay kale in a single layer on a baking sheet (you may need to use 2 sheets).
Lightly spray both sides of the kale with the cooking spray.
Bake for 10-12 minutes.
Season with salt and pepper.
Enjoy the crunchy goodness!

SO HOW'D IT GO?

In Chinese restaurants in Europe, they have something like this called Crunchy Seaweed, but it is not seaweed, but of the cabbage family (as is kale). They shred it almost paper-fine and season it with salt and sugar for a salty-sweet snack.

Huh... not sure what I think of this.  They had some weird appeal... but not quite enough.  They also had a rather strong smell.  I made them and then brought them to class and like 5 people around me turned to see what the heck I was eating... then when they saw what I was eating they looked shocked.  It was kind of entertaining.  I think some people might really like these...  I can tell they are good, they just aren't for me.

This recipe was super easy and tasted pretty good too, the only problem was making sure it didn't overcook as it gave the kale a bitter taste, next time I'll try it with a little garlic powder or poultry seasoning, YUM!

these were really good, kind of addictive and MUCH healthier than potato chips.
