Cucumber and Garlic Salad

What you need: 

1 medium cucumber
2 tablespoons vinegar of choice
2 cloves fresh garlic, grated
1 small onion, minced
fresh parsley

What you do: 

1. Peel alternate 2 inch strips off cucumber skin and dice to personal choice.
2. In a bowl, combine vinegar and garlic; let sit for 10 minutes.
3. Mix in onion, then top with parsley.
4. Chill before serving.
