Cucumber Salad Extraordinaire

What you need: 

5 medium cucumbers, peeled, sliced into 1/4" rounds
1/2 tablespoon salt + to taste, divided
1 clove garlic, pressed (as a garlic lover, I usually ratchet that up to 3)
2 tablespoons chopped fresh dill
2 tablespoons vegan sour cream or vegan yogurt
1 tablespoon chopped fresh chives
pepper, to taste

What you do: 

1. Place cucumbers in a bowl and sprinkle with salt; set aside for 1 hour. Rinse off salt and press out excess liquid.
2. Add remaining ingredients (1/2 tablespoon salt, garlic, dill, vegan sour cream, chives, and pepper); toss to combine.
3. Set aside for 1 hour at room temperature, then chill for 1 hour. Stir before serving. Easy and heavenly!
