4 slices vegan bread
vegan mayonnaise, to taste
1 cucumber, about 6" long
handful fennel sprouts
2 large leaves of lettuce
freshly ground black pepper, to taste
1. Smear the mayo on each slice of vegan bread. Cut tips of cucumber off, rubbing tips on exposed flesh to reduce bitterness. Slice into four lengthwise pieces (leave the skin on!).
2. Place two slices of cucumber on each of two slices of vegan bread.
3. Cover cuke slices with sprouts, lettuce, and lots of black pepper. Top with remaining vegan bread slices.
