Dankolicious Mushroom Reuben

What you need: 

2 cups chopped mushrooms
salt, to taste
pepper, to taste
1/4 cup thousand island dressing, or to taste
4 slices marble rye bread
4 slices vegan swiss "cheese"
1 cup sauerkraut divided, or to taste

What you do: 

1. In a pan over medium-high heat, add mushrooms, salt, and pepper; saute for 5 minutes or until mushrooms have darkened.
2. Spread dressing on one side of each slice of bread, then layer each with a cheese slice.
3. Layer two of the slices with mushrooms and sauerkraut, then top with the remaining bread.
4. Put the two sandwiches on a grill or panini maker and toast for 5 minutes, or until it becomes warm, melty deliciousness.

SO HOW'D IT GO?

Sounds really good and healthy - I'll have to give this a try when large capped mushrooms are available again. Thanks for the recipe :)
