Delicious Apple Cake

What you need: 

2 cups chopped apples w/skin
1 cup brown sugar
1/4 cup oil (canola, peanut, etc.)
1/4 cup chopped walnuts
1/4 cup raisins
1 teaspoon vanilla
1/3 cup applesauce
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt

What you do: 

Mix oil, vegan sugar, and applesauce. Add rest of ingredients and mix well. Pour into 8 x 8 cake pan. Bake at 350 degrees for 45 minutes.

SO HOW'D IT GO?

Wanted to add that I've tried this recipe with both banana and coconut in place of the apple, and it came out delicious with those as well

I didn't have raisins so I put in chopped dates instead, and I cut down (and substituted) for a bit of the flour to make it lower-carb. It came out great, thanks for the recipe

I cut the sugar to half a cup because I wanted it to be a pretty healthy cake I could eat for breakfast  ;) I increased the cinnamon to a teaspoon and added half a teaspoon each of ginger, allspice, ground cloves, and nutmeg. I'm also baking it in a 10" pie pan because I didn't have an 8 x 8 inch pan available. it smells delicious...

Pretty good! I made some changes - subbed pecans for walnuts, and chocolate chips for raisins (would have liked raisins but was out! not a very close substitute, I know). I think the base recipe is good, but the spices could be improved. The cake didn't have much of a distinctive flavor to me. Next time I'd add more cinnamon, maybe some nutmeg. Still, it's yummy and a good breakfast snack!  :)

Delicious!!! What a great dessert! It will make a great breakfast bread! I added flax seed and bran and used coconut oil. I also used the applesauce but wasn't sure why the recipe called for it. Everyone said it turned out really moist but this has been my experience with any ind of apple bread or cake or anything I sub applesauce for oil... but, I followed the recipe except for my additions and it is delicious!!! I love how moist it is!!! Thanks so much for this recipe! I also cut the sugar to 3/4 , and it was NOT too sweet, it was just right.  But I used granny smith and one fuji apple.. so mayb the tart apples helped!! OH!! I also added a pinch of nutmeg... ok, so that's all I changed!!! I couldn't have done it without this recipe!

I'm making this for the second time now.

The first time I substituted apple sauce for the oil (I don't like oil in my cakes), did only half a cup of sugar, and had a mixture of chopped walnuts, hazelnuts, coconut and kasha. Used half a cup of that instead of the raisins and walnuts as my children don't like raisins.
I added some cocoa, used kardemom instead of cinnamon and added some ginger as well.
As a last trick up my sleeve,  I added a little whisky.

The cake came out a little moist but very nice indeed. It was a big hit with my guests (all carnivores!) as well.
It was a bit sweet to my taste though, so now I'm doing the same recipe as last time, but this time omitted all sugar. The batter tasted great, but I won't know how the real thing will be until it's done.    ;)

this cake was delicious though very rich and too sweet (i only used 3/4 c sugar). so i had to whip up vanilla sauce for it to be edible.  :(
oh, and i used almonds on top of it. and toasted nuts before mixing in.

Yum!  I suggest added more walnuts as they are tasty in this recipe.  I also used applesauce instead of oil.  It was a little gooey in the middle after 45 min but I might have used too many apples (3 medium).  Was great anyhow. Thanks!

This was great!!!  I subbed out all the oil for applesauce and only used 1/2 cup of brown sugar and they were still sweet.  I say they b/c i made as cupcakes... They stuck to the paper thou :'(

I just made this has a good flavor, I used a green sour apple, forget the name, a common one. I grated a lot of it, to get a texture variation in there. The cake was thin maybe I used to big of a pan, but overall very good.  :)
