Delicious Cabbage Sloppy Joes

What you need: 

1 bag vegan veggie burger crumbles
1 bag coleslaw mix (shredded cabbage and carrots)
1 each red and yellow bell pepper, thinly sliced
1/2 medium yellow onion, diced
2 T olive or canola oil
2 T apple cider vinegar
2 T yellow mustard
1 cup organic vegan ketchup
1 cup organic vegan BBQ sauce
whole wheat sandwich buns, toasted lightly

What you do: 

Combine ketchup, BBQ sauce, vinegar, and mustard in a small bowl; set aside to rest while you prepare the joes.
In a large, deep skillet, heat oil to medium high. Add onions and peppers and stir-fry a few minutes. Stir in coleslaw mix and burger crumbles and cook just until crumbles are hot and cabbage is slightly wilted. Pour over with the pre-mixed sauce and stir to combine well. Heat through for about a minute, then remove pan from heat and serve heaping spoonfuls on toasted buns. Enjoy!

SO HOW'D IT GO?

I just tried these and they ROCK!  I used locally grown cabbage and green peppers.  I used commercially made ketchup and BBQ, but next time I'm using homemade to better control the sodium content.

I made this for dinner last night, and it's pretty tasty.  You hardly notice the cabbage, so this would probably be good for anyone trying to sneak veggies in.  I kind of did my own thing with the sauce, based on what I had on hand.  This is also good over mashed potatoes if you have no bread products or just want to serve it a little differently.

Yeah, I thought they were great! It probably would have been better with bbq sauce...but I made my own sauce, like I said...and it still turned out in a tasty fashion. I'll try the carrots next time...I just had so much cabbage! I wish I had some of your ciabatta rolls!  :)

Ally! ... I'm glad that someone else has tried this. I think its a great way to use cabbage. I also added some shredded carrot to the mix which was great. I would definately make these again. What did you think? Well I'm off in search of my next recipe. Your mexizza pictures have inspired me ;)

and added cabbage! That's a great idea. I had 3/4 of a cabbage head that I needed to use, and my husband said, "best application of cabbage that I've had."  ;)b

:)>>> *SIGH(of love)* mannnn...this site rules! The recipices get better and better. I made this today for lunch and I really enjoyed it, plus it was really easy to make. Last time I had that kind of taste was a several years ago at Smokeybones and it was not caggabe or guilt free, but this was just perfect for slopply joe lovers. Thanks for recipie  :P

I made this for dinner tonight and not only was it simple and quick but it tasted sooooo good. I love the idea of putting cabbage in the mix. I never really cared for it and this recipe changed all that. The sauce has a very good flavor. Almost a sweet flavor. I'm glad that I could make my own sauce. I would make this again!  The only thing I did different was add green peppers instead of red & yellow. Next time I will add more cabbage. ;)b
