Delicious Vegetable Paella

What you need: 

1/4 cup of olive oil
1 small onion, chopped finely
2 pressed garlic cloves
2 sliced tomatoes
3/4 cups of rice (basmati or any long grained)
a pinch of saffron
1 red and 1 yellow bell pepper cut into pieces
2 handfuls of thawed, frozen peas (not canned)
2 handfuls of cut, cooked, green beans (not canned)
1/2 cup of cut broccoli
3/4 cup of vegetable stock or soup (I used Pacific Foods Vegetable broth)
salt, chopped parsley, a bit of lemon juice
a dash of sweet paprika

What you do: 

Fry the onion and garlic in a big, deep skillet with the olive oil. When it starts to wilt and turn yellow, add the cut vegetables and cook for about 10 minutes on medium heat. Add the rice, salt to taste (remember stock or broth has salt!) and a bit of saffron. Mix well and add the broth. Cook on low to medium heat stirring occasionally for about 20 minutes or until rice is cooked according to preferred consistency. Do not overcook or it turns mushy and lumpy. Add a bit of water if it gets too dry. Remove from fire and before serving add some fresh, chopped parsley and a dash of lemon juice (about a tablespoon).
Serve with a big bowl of salad with Italian dressing.

this dish was delicious, it was very easy to make and was a wonderful christmas meal!!

I found this recipe when searching for something with the little amount of food that I did have on hand. I didn't have the saffron and from what I read about paella, that seems to be a key ingredient so my review may not be very fair. This is a good meal to do if you only have the basics. I didn't have fresh tomatoes or saffron and I did add the Tofurky sausage as someone else suggested. I had to substitute fresh tomatoes with canned. Yuck. Anyway, it's a good base recipe and maybe next time when I have the money to get saffron I can re-try it the way it's suppose to be. I'm hoping it will be one of those meals that tastes better the second day though!

I liked this dish alright, but it seemed to miss some flavoring of sorts...although I'm sure it was the vegetables that were supposed to be the flavoring. I think my tastes are just not suitable for this type of dish. The omnivore boyfriend was not a fan, either. He said it tasted too "healthy." I think I prefer a more full-bodied dish.

This recipe makes a nice leftover lunch, though!

This recipe is sooo good!  I made this for a few of my friend (all meat eaters) and they loved it!  In fact, we doubled the recipe and it still wasn't enough for all of us to get seconds.

This was my first attemp at making paella and it turned out fantastic! my non-vegie boyf loved it. I also added a tiny bit of chilli powder which gave it a nice colour  :) This will become a staple of our household.
