Delightful Mac and Cheese

What you need: 

3/4 cup nutritional yeast
1/4 cup pine nuts
2 teaspoons onion powder
1 teaspoon garlic powder
1/2 teaspoon salt
1 tablespoon parsley
1 teaspoon pepper
1 tablespoon soy sauce
1 cup water
3 tablespoons olive oil
1/4 cup flour
1 cup uncooked pasta

What you do: 

1. Put water on to boil for pasta. Preheat oven to 400 degrees F. While water is boiling, put first 7 ingredients (through pepper) in the blender and blend until well blended.
2. Add water and soy sauce and blend more. Heat oil in skillet, and then add flour to make a roux. Stir constantly until you don't have any lumps. Put pasta in boiling water and cook according to package directions.
3. Pour the cheesy sauce you made in the blender into roux and stir until it is warm and at your desired consistency (if it is too watery, let it reduce some). When it gets to that consistency, remove from heat.
4. Drain pasta through colander and pour pasta into the pan of cheesy sauce. Transfer mixture into oven safe dish, and put it into the oven for 10 or so minutes. Enjoy.

SO HOW'D IT GO?

Mmm, delightful indeed!

The only thing I changed in this recipe is that I replaced the water with soymilk, cause water in sauce grosses me out. I think next time though, I might add a tiny bit more soy sauce.

Nice recipe! I'll definitely be reusing it.

I just tried this after reading Cali's mac and cheese post. I was skeptical, but it turned out really well. I'm not sure if I like it more than "the best mac and cheese in the world, seriously" or not, but i did like it. And the best part is, my son liked it, and he has not liked any other M-C recipe I have made to date. So this one wins.  :)>>>

If you have ever been discouraged by vegan "Mac & Cheese" recipes-- Try this one!  It's delightful indeed!  I had a huge hankering for some comfort food tonight and tossed this together.  It's creamy and delicious!  I didnt' have any onion powder, so I ended up slicing a little bit of onion and throwing it into the food processor with all of the spices. Also, I added some cayenne pepper, a dash of nutmeg, spinach and peas.  A great meal to curl up to on a cold winter's night!

Yum!  I didn't have soy sauce or anything like it, so I was a wee bit worried it wouldn't turn out.  It did.  And it rocked.  ;)b

awesome! it's definitley something you can play around with, but the key is the roux plus nuts plus nooch (IMHO)!

I used cashews and only 2/4 of yeast. The sauce was really thick when mixed with the pasta. I don't know why though.

I have to say that this is the best tasting mock mac n cheese I've had to far. It still doesn't taste exactly like how I remember but it is good. Thanks!

where can i find nutritional yeast??  whole foods said they don't even know what that is and whole foods is the health food store GOD. online maybe? i need a trusty brand name though. yeasty things make me skeptical. plz help, i want mac n chreese!

Whole foods didn't know???  Bizarre.  Red Star is a brand I see a lot.  I find in bulk in the local grocery and health food store.  It looks like a soft, flaky cornmeal.  It's great on anything pasta, or popcorn, or anything you used to use cheese on.

this was so awesome!  yum.  i made slight changes after reading the reviews, i halved the parsley so that it wouldnt turn out green and i added an extra half cup of pasta.  i would say having 1 cu p of pasta would be good though, mine turned out not super cheesy, but i like it that way.

mmmm, it was soo good.  i really think the little bit of nuts really adds something to it.  good call on that one!
