Delightful Millet

What you need: 

1/2 cup pine nuts
1 tablespoon olive oil (optional)
1 cup millet
1/4 cup dried cherries
1/4 cup chopped dried apricots
2 cups water
1/2 tablespoon coriander
1 tablespoon nutritional yeast

What you do: 

I created this myself with a little inspiration
Toast pine nuts with or without oil until they start to change color. Add millet and stir together for about 30 to 45 seconds.
Add remaining ingredients and bring water to a boil. Lower heat to a simmer and cook for 15 minutes or until water is absorbed.
Serve.
*If you wish, you can use slivered almonds instead of pine nuts and whatever dried fruit you desire.

SO HOW'D IT GO?

THis is a great! receipe if you take a few liberties with it.
No nuts - i'm allergic
No olive oil.
No yeast
different dried fruits
added black sesame seeds
sweetened with Agave syrup.
....
YUMM!  :)

Between the coriander and the pine nuts, this recipe didn't "wow" me.  There were just too many strong flavors, all trying to stand in the spotlight.  This would be much better with almonds and cinnamon.
