Diana's BBQ Tofu

What you need: 

2 blocks extra firm tofu (firm will work also, and seitan is a wonderfu substitute!)
2 medium sized cans tomato paste (not the mini size, sorry, don't know oz)
10 teaspoons blackstrap molasses
5 tablespoons soy sauce/tamari (haven't tried braggs with this, but go for it)
2 tablespoons apple cider vinegar
1 onion, chopped (any kind, not red)
3 cloves garlic, minced
1 1/2 can water (use tomato paste can)
little oil for sauteing

What you do: 

Drain and press your tofu (gently, don't break any!) Slice lengthwise into strips about 1 inch around. Place in casserole dish. Set aside..Now this is supposed to be creamy and thick like BBQ sauce. You can add more water as you wish, but as the tofu cooks it will release water, keep that in mind.
Saute the garlic and onions. Be sure not to burn.
Put all of the ingredients (except tofu!) in pan (big cast iron works best). Whisk Well. Lower heat and simmer for 30 minutes.
Pour over tofu. Bake at 350 degrees Fahrenehit for 30-45 minutes. I wait until the tops of the sauce are starting to dry and darken.Serve with rice or fav veggies! My husband and I can eat a pound together. But some people can't, that's why the servings are 'complicated.' It makes a meal though for sure.
