Dinosaur Legs (Tofu Nuggets)

What you need: 

1 pound regular extra firm tofu
1 cup oat flour (Use blender/coffee grinder to grind rolled oats into flour)
1/2 cup nondairy milk (I use soy)
1 tablespoon soy sauce
1 tablespoon olive oil
1 1/2 teaspoons onion powder
1 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon ground thyme
1 teaspoon corn starch
1/4 teaspoon baking soda

What you do: 

1. Preheat oven to 375 degrees F, and grease a baking sheet.
2. Mash all ingredients together with potato masher, form into 10-12 patties.
3. Bake on prepared baking sheet for 12 minutes, flip and bake an additional 10-12 minutes.
4. Serve with sweet mustard, BBQ or teriyaki dipping sauce.

SO HOW'D IT GO?

I had 3 lbs of tofu in the freezer for sooo long. I bought it at one point to make tofu scrambler and still had a ton left.

I absolutely HATE tofu. I like it in scrambler and in general tso's sauce, otherwise I just can't tolerate the texture, which is odd since texture is very unimportant to me.

I decided to try this because I motor through Chick'n patties. I AM A TOFU CONVERT. Absolutely excellent. I made a few changes, and they were great.

Well, I panfried just a few them in a skillet with a small amount of oil, and they were excellent. They came out wonderful. Still waiting on the ones in the oven!!

Little2ant, it's my son that is soy free, he's at his Aunt and Uncles though, so we made tofu.

Healthy momma, I thought your daugher was soy free? Maybe that has changed?!

We made these yesterday....the whole family liked them! I floured and pankoed half of them, and those were a hit too. These remind me of Boca Chic Patties, except much healthier!
I even shaped one into a huge looking drumstick so it looked like a dinosaur leg!

The only thing I did differently, was to add about a Tablespoon of Vital Wheat Gluten. I wanted to make sure they were nice and firm and not mushy. I also put the tofu in the food processor to make sure it was really crumbly and even first.
I didn't measure very well with the liquids, so my "batter" seemed to thin to form patties at first. I added a bit of WW pastry flour until it was formable.

Overall, a hit, and I will add these into the sacred hand written recipe box. Especially since it was so easy and dinner was done in about 30 minutes.

I really like how easy these are to make! My daughter and I formed them into 15 nuggets. They needed to bake for substantially longer than it says, almost an hour. Next time I'll put more spices into the mix and experiment with different dipping sauces. I made a dill dip that is delicious with chips, just not great with these... Hot sauce went well and I think some sort of mustard sauce or BBQ sauce would be fitting. To make these really small and have them as a snack would be yummy.

Fantastic! Made in bulk for my co-op of 30, and they turned out excellent! They were a little bland for us, but with the right toppings they were GREAT! Made for excellent leftovers, too. A little tweaking to give these bad boys a kick and you have a great, easy recipe.

These are great!  Very fast and easy to make 8)  Only change I made was using hemp milk and I had to leave it in the oven for a few extra minutes.  I will be making these often!

These came out AMAAAZING, my son and I ate all of them. I had put some of the mixture away in fridge for later but after we ate our nuggets we still craved more so I ended up going in and making the rest. Half of them I made with panko flakes and the other half just as you posted. This is our new favorite snack.

For a dip, I found a recipe on here and just changed it a bit..
In a small pan put 1 tbsp apple cider vinegar
4 tbsp water
1/2 tsp dry mustard also I added 1 tsp arrowroot powder to thicken the sauce
1 tbsp miso added after you  have warmed up the above ingredients and removed from heat, constantly stir until combined.
