Discovery Valley Ranch Dressing

What you need: 

12 ounces firm tofu, drained for 10-15 minutes (important to use firm)
1/4 cup cider vinegar
1 teaspoon salt and pepper
1 teaspoon celery seed
1/2 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons dill weed
1/2 cup extra virgin olive oil

What you do: 

1. In your blender jar, place all ingredients except the oil. Process until smooth.
2. Drizzle the oil slowly through the hole in the lid, until all incorporated.
3. Blend additional 1 minute. Refrigerate.
This tastes like the real thing!

SO HOW'D IT GO?

I will be making this all the time. I used half firm and half silken tofu because that's what I had in my fridge. Tastes better than any vegan dressing I've ever bought.

I really enjoyed this recipe and will use it again.  It seemed a bit zesty, and reminded me of bleu cheese dressing.  But I was not very precise in my measurements so maybe that's why.

This ranch recipe is the best I've made - my husband goes through a batch every week! We like it with a little more garlic & I add some chives. YUM!
