Dragonflys Unchicken Quesadillas

What you need: 

1 heaping cup Dragonfly's uncheese mix (http://vegweb.com/index.php?topic=7126.0)
1 cup water
16 ounces mild salsa
12 ounces cooked chicken-flavored analog or seitan, cut in chunks
1 dozen whole wheat tortillas, warmed

What you do: 

1. Preheat oven to 350 degrees F. Lightly oil a cookie sheet. Mix the water and dry uncheese mix in a saucepan, and heat to make a very thick cheese sauce. Once thick, remove from the heat.
2. Add salsa. Stir this up. The sauce should still be pretty thick. Add the analog or seitan. Stir. Divide the sauce/analog combo evenly between the tortillas.
3. Wet the circular edge around 1/2 the tortilla, fold the other 1/2 over and press to lightly seal. Try to do so without filling the half moon shape with air. Please on prepared cookie sheet. You can overlap them a bit.
4. Bake for about 20-25 minutes. The filling should be hot and bubbly.
I like to serve topped with lettuce, chopped tomatoes, more salsa, olives, and vegan sour cream. These are rich, gooey, cheezy tasting and filling.
