Easiest Cupcakes on the Planet

What you need: 

1 small can of pumpkin
1 box of vegan yellow cake mix

What you do: 

Mix and divide into greased muffin tins (or use liners) and bake per the directions on the cake mix box.
If you prefer, you can just make this as a cake instead.
My husband moaned after each bite, that's how much he loved them. They are super moist and absolutely delicious!

SO HOW'D IT GO?

These really were the easiest cupcakes ever!  And they come out perfect, really moist and fluffy.  I used a devil's food chocolate cake mix, added about 1/8 cup soymilk to the batter, and made heart-shaped cupcakes... but they were gone before I got a chance to take a picture.  Next time, I'll try this as a cake.  Thanks for a great recipe!

I finally tried these simply using a box of yellow cake mix and a 15 oz can of pumpkin as the recipe calls for, and thought they were a little odd tasting.  If I make these again, I think I would try adding pumpkin pie spice or something because it felt like they were missing something.  (Though the people I fed them to didn't seem to think they were odd, so maybe it's just me.  :-\)

OMG!  I didn't need any extra water - or anything else, for that matter.  However, I DID voluntarily add a bag of butterscotch chips, 2-3 tbsp. of maple syrup, and generous amount of pumplin pie spice.  I melted the butterscotch and simply mized everything together.  Once the cake was baked and still hot, I experimented by topping it off with a light coat of lemon curd (not vegan, but vegetarian). WOW!  What an unexpected surprise.  I couldn't wait for it to cool - had to eat it right away.  YUM!  Thank you for sharing! ;D  :D ::)

i also added 1/2c water to soften up the batter a bit...these were fantastic...i made a vegan version of the creamcheese style frosting to go on top....try it:

8oz tofutti "cream cheese"
1/4 c soy garden "butter"
1 c confectioner's sugar
1teaspoon vanilla extract

when cream cheese and butter are softened at room temp, blend together...then add in the sugar a little at a time and vanilla....add more sugar if you want it even sweeter as this is not an over-the-top sweet frosting

I've also made these chocolate.  I used to have a recipe for making the cake mix part out of various dry ingredients, which was even better than having to buy a mix, but I think I lost it in the move.  Anyway, try it with chocolate, it sounds weird, but they're great.

I just made this with a spice cake mix, a 16-oz can of pumpkin, 1/2 cup of water, and about 1/4 cup applesauce (it was too dry with just the pumpkin). They took a long time to bake (almost double the time listed on the box), but they are SO GOOD! Next time I might add some pumpkin pie spice for extra flavor, but it isn't really necessary. I bet yellow cake would also be delicious. I didn't have the problem phatpeechez did, though - I made 16 muffins, and they were smaller than I would have liked, so next time I'll make 12. Anyway, thanks Sarah Beth! I'll totally use this recipe many times in the future. :-)

I've made this with devil's food cake mix and it is almost like a brownie.  No pumpkin taste at all.  My no-veggie family actually liked these!

:P This is absolutely fantastic...First I made muffins, then I baked a cake and took it to work...It did not last an hour...Thanx so much..I'm off to bake another..I like easy  ;D
