Easiest, Healthiest Pie Crust!

What you need: 

1 1/2 cup barley or whole wheat flour
1/2 cup coconut oil (grapeseed or olive work)
1-2 tablespoons soy/rice/almond milk
1 teaspoon sugar cane
1 teaspoon sea salt

What you do: 

Put the ingredients all together in a pie shell, mix with a fork and pat down. Double the recipe if you want to have a top to your pie.Depending on the flour consistency (I get a really fine barley flour), you may need to play with the liquids. When you mix it, it should crumb.
Add your favourite fruit, veggies, tofu quiche or whatever!!! This recipe is so easy, I baked a pie while chairing a meeting once!
Bake as you would based on the ingredients you are adding.

SO HOW'D IT GO?

Coconut oil contains saturated fat, but since it is plant-based, it is not at all bad for you. In fact, quite the opposite is true.

I'm a little hesitant about the coconut oil. I had a long conversation with a friend recently about it because she was using it in her vegan cooking and as someone who grew up in a family who was extremely health conscious I was worried for her...

Coconut oil is almost pure saturated fat which is not good for you at all... yes there are studies out there that argue that there is some good cholesterol in saturated fat but not enough to make it worthwhile, in any respect.

not to mention a 1/2 cup of ANY oil (veggie/olive/whatever) isn't good for you. Yes, there might be  better choices for oils  in some respects but it's ALWAYS better to go with quantity not quality when working with oils. good fat is just as bad as bad fat if you use a lot of it. it kinda defeats the purpose.

I try to use no more than 2 tablespoons of any oil when cooking, and that's max.--- especially if you are trying to eat a low cal/fat diet.

not to drag you down- I'm sure this is a really great recipe and I'd love to try it, maybe toned down a bit; but the title is very deceiving.
