Easy and Delicious "Sloppy Joe" Burgers

What you need: 

1 cup boiling water
1 1/2 cup textured soy protein granules
1 cup diced tomatoes
1 6 oz. can tomato paste
3 cloves garlic, minced
1 teaspoon oregano
1 teaspoon basil
1 teaspoon salt
1 teaspoon pepper
1 tablespoon oil
1 small onion, diced
1/2 green bell pepper, diced
2 tablespoons soy sauce
cayenne pepper to taste

What you do: 

Don't be afraid of textured soy protein if you've never had it. I know it looks weird, but trust me, it tastes great.
In a medium bowl, mix boiling water into textured soy protein and let sit 15 minutes.
While your textured soy protein is sitting, in a blender or food processor, blend tomatoes, tomato paste, garlic, and spices.
In a large skillet, saute onion in oil until soft, then add bell pepper and cayenne. If you want your burgers spicy add 1 teaspoon cayenne, for medium add 1/2 tsp, and for mild, add 1/4 teaspoon Saute for about a minute.
Stir in tomato mixture and soy sauce and cook 5 minutes on medium heat.
Add rehydrated textured soy protein to skillet and stir to combine. Cook on medium-low heat for 25 minutes, stirring occasionally.
Serve on a warm hamburger bun and you're done! Perfect comfort food! :d
