Easy Baba Ganoush

What you need: 

1 medium eggplant, roughly chopped
2 tablespoons olive oil
juice of one lemon
2 heaping tablespoons of tahini
2 cloves of garlic
1/4 teaspoon salt
2 tablespoons fresh parsley or 3 tablespoons dried parsley

What you do: 

Preheat the oven to 400 Fahrenheit.
Place eggplant in a large baking dish or on a baking sheet and toss with oil. Bake for 25-30 minutes, or until tender.
In a food processor, blend together the baked eggplant, lemon juice, salt, garlic, tahini and parsley until slightly smooth. It might need a bit more lemon juice or water to achieve the desired consistency.
It is your preference to peel the eggplant and/or to salt and soak it. I don't find these steps necessary, but it is an option.

Just made this and it's pretty good. I put extra garlic and had to sub lime for lemon. It was quick and easy and taste great.

it was very good, but i agree with a couple previous reviews that it needed just a tad more salt, which i added, and i threw in a little cumin too.. besides that it was great..

to make it the traditional way and give it that smoky flavor that good baba ghanoush has, i blackened the eggplant over the stove, let them steam and then removed the skin and mashed up the flesh really good.. thanks for the recipe!

Mmmm... just put slightly more salt, and then it's perfect.

Cream the Tahini and spices before adding eggplant to make it a smoother texture. I found this to be a little bland, as if some important spice was missing but overall good. I will make this again, but maybe try adding chili pepper or spicy spices.

To remove bitterness you can salt the eggplant, proir to cooking.  Salting is only really necessary if the eggplant is older; if it is young or fresh you do not have to salt it.  After cutting the eggplant, lightly salt it and let it sit for 15 minutes.  Then rinse under cold water and pat dry with a paper towel before cooking.

well, this smelled really good and looked really good. But i think I had some bad bad eggplant

anyone know how to tell when ones ripe, this was so bitter it was unedible, but I dont think its the recipes doing
