Easy Black Bean and Corn Salad
What you need:
2 tablespoons dried parsley
1/2 teaspoon cumin
pepper, to taste
2 (16-ounce) cans black beans
2-1/2 cups salsa
10 ounces corn
1 (2-ounce) jar pimentos
3 green onions, sliced
1 teaspoon minced garlic
2 tablespoons red wine vinegar
1 tablespoon olive oil
What you do:
1. In a bowl, combine the parsley, cumin, and pepper.
2. Mix in the remaining ingredients (black beans, salsa, corn, pimentos, green onion, garlic, red wine vinegar, and olive oil).

I love this in a wrap, garnished with some chopped tomato and raw red pepper, maybe a dab of yogurt.

This is a wonderful burrito filling, too. Quick, easy with a little salsa kick. I followed the recipe exactly except I left out the pimentos because I didn't have any. I don't see any need to alter this recipe. Tastes great as is.
Forgot to say that the cans of black beans need to be drained and rinsed!
This recipe tastes even better the second day.
