Easy Blueberry Pie

What you need: 

3 1/2 cup blueberries
2 tablespoon corn starch
1 1/2 cup sugar
1 baked 8 inch pie shell
juice of 1/2 orange

What you do: 

Cook 2 c. blueberries in 1 1/2 c. water for 5 minutes. Add vegan sugar and orange juice, and cook another 5 minutes. Combine corn starch and 1/4 cup cold water, and add to cooked blueberries. Stir until thickened. Cool. Pour into pie shell, and cover with remaining blueberries. Refrigerate.

Thanks for that note. I wouldn't have thought to drain the frozen berries, since I don't use frozen foods too often. Thanks Jade1!

My pie was not a pie!!! It was more like a pie crust with an insane amount of blueberry jelly syrup ;D I only used about 1 3/4 cups of liquid (1 c H2O, 1/2 apple juice, plus cornstarch mixture) but it was way too saucy even after cooking it down before adding the cornstarch water mixture. However we all ate it anyway. I know that my dish was too saucy because I started with frozen berries (which I didn't drain >:D), so next time I will thaw the berries and see how much liquid I'm working with before adding the rest of the ingredients. But I usually suck at making pies anyway :) THANKS FOR THE RECIPE!!
