Easy Herb Roasted Potatoes

What you need: 

2 medium potatoes
2 sprigs of rosemary
2 sprigs of parsley
2 sprigs of thyme
1 teaspoon garlic powder
1/3 cup extra virgin olive oil
salt & pepper, to taste

What you do: 

Preheat your oven to 375° (or toaster oven to 400°).
Rinse and scrub your potatoes in warm water, dry them, and chop them into small chunks. Place them on a small baking sheet.
Chop your fresh herbs and add them to the olive oil in a small bowl. Add garlic powder and stir well.
Drizzle the olive oil mixture over the potatoes and toss them with tongs to ensure that they're coated evenly.
Bake for 20 minutes and carefully toss the potatoes. Bake for an additional 10 minutes. Add salt and pepper to taste.
* Note: Mix and match your own herbs until you find your favorite flavor. Sometimes I add dry herbs (sage, cloves, dill, etc.) for extra flavor. Try what you like and post comments with your ideas!

SO HOW'D IT GO?

These are very simple and good.  I used all dried herbs and new red potatoes.  Nice side dish!
