Easy Pancakes

What you need: 

2 1/2 cups all purpose flour
2 tablespoons sugar
2 tablespoons baking powder
1 tablespoon vegetable oil
1 teaspoon salt
2 1/2 cups nondairy milk or water
dash cinnamon, optional

What you do: 

1. Lightly mix all ingredients in a fairly large bowl; leave 5-10 minutes to rise. It's important only to mix the batter enough to moisten, as overmixing will make the pancakes tough.
2. Gently fold down; leave again for 5-10 minutes if you have the time, and gently fold down again. (I don't usually bother, since everyone's starving!)
3. Cook over medium to medium-high on an oiled skillet until golden, carefully breaking apart any large lumps with the spatula. Serve immediately.

This is a great little recipe when you are short on supplies but want something quick and yummy :)

My pancakes turned out moist, fluffy, and delicious! I really like having such an easy recipe on hand because this is forgiving to changes and additions. I'm going to add a little vanilla and vegan chocolate chips to the next batch (i.e. tomorrow's breakfast!).

These were really terrific, but I can't seem to make anything without playing around with it -- so here's what I did.  I have a grain mill, so I used 2/3 whole wheat and 1/3 oat flour (approx.), finely ground, added cinnamon, nutmeg, vanilla, about 4 T. ground flaxseeds, 4 sliced bananas, 3 T. maple syrup, and some toasted walnuts.  Also left out the oil, and added lots of water to thin the batter  -- maybe 1 1/2 cups.  They're our new household favorites!  ;D

wow. wow. wow! ;)b what a winner!
i used pumpkin and blue diamond almond milk for the liquid - i also put a  little pumpkin spice blend. This is the reason to cook at home because i have never tasted anything this good in a restaurant -  vegan or othewise.

made these for brunch. my boyfriend also enjoyed them. Made too much for the both of us, but I decided to gobble up the rest the next day!! :) Yum Yum :D

This was great.  I made them into buttermilk pancakes by using a T. of vinager in the soymilk.  that made them so light and fluffy.  I also added a tsp. of vanilla.  These were the best I have found. thanks. :-*

I love these pancakes!  I recommend reducing the baking powder slightly and adding more liquid, as they tend to be crazy thick otherwise (and subject to uneven cooking...)  Here's my version:

    2 1/2 cups all purpose flour
    2 T sugar
    1 T baking powder
    1 T vegetable oil
    1 tsp salt
    3 cups vanilla almond milk
    1 tsp cinnamon
    2 bananas, sliced

I fry it with the bananas in the batter to make them sweet, then top them with blueberries or peanut butter, and maple syrup

Mahalo for the recipe.  These are the best pancakes that I have ever eatin.  My Husband eats all kind foods and he loved these so much that he will never make a non-vegan pancake for himself again.  We had a great breakfast and really enjoyed them.  We followed the recipe exactly and it came out perfect.  The true trick really is to NOT over mix and to leave it "looking" lumpy before it goes onto the skillet.  They came out 100% great.  Again Mahalo Plenty.   -Aloha. 8-)

I have made these so many times and they always come out awesome. Fluffy and smooth. My favorite way to have them is to mix a little bit of maple syrup with some thawed frozen berries (mash them a little with a fork so the juices mix with the maple) and plop that on top of them. Thank you very much for this recipe... its well used in our vegan house!
