Easy Pancakes

What you need: 

2 1/2 cups all purpose flour
2 tablespoons sugar
2 tablespoons baking powder
1 tablespoon vegetable oil
1 teaspoon salt
2 1/2 cups nondairy milk or water
dash cinnamon, optional

What you do: 

1. Lightly mix all ingredients in a fairly large bowl; leave 5-10 minutes to rise. It's important only to mix the batter enough to moisten, as overmixing will make the pancakes tough.
2. Gently fold down; leave again for 5-10 minutes if you have the time, and gently fold down again. (I don't usually bother, since everyone's starving!)
3. Cook over medium to medium-high on an oiled skillet until golden, carefully breaking apart any large lumps with the spatula. Serve immediately.

SO HOW'D IT GO?

I cannot , for the life of me, get these pancakes to come out.  They keep on coming out with varying degrees of rubberiness.  I am definitely not over mixing, with only a couple of stirs and very lumpy batter.  I am using less than half whole wheat flour and water in place of soymilk.  Any hints or clues as to what I am doing wrong?  I cooked them on med-high the 1st time, but did low-med last night, with no improvements.  I also tried varying the baking soda as a few have suggested.  I really want these to come out good!

WOW! I could not believe how awesome these were!  I served them with earth balance spread and maple syrup with a side of gimmie lean sausage style patties.  Everyone gobbled them up.  Seriously the best pancakes I have ever had!!!!  Pancakes with eggs and milk are no where near as good as these are!!!!!

Yum! I've made these about 5 times now, adding different things - I used wheat flour and brown sugar and it still tastes good. Also, they're great with chocolate chips mixed in the batter. Mmmm...

These were pretty good.  I still need to work on getting them more fluffy but it's hard to leave all the lumps...sigh... I'll keep working on it. I've also added blueberries and they came out wonderfully!

There pancakes were amazing! My boyfriend suprised me with heart shaped pancakes for our 2end year anniversary, and he used this recipe. They were supper fluffy and insanly delciouse!
Wonderful taste and tecture- my by even loved them- which is amazing because he's a huge meat eater and thinks that pancakes without eggs are abnormal... thus they are amazing for non-vegan or vegetarians as well~!

- I didn't know he was making them so I did not pick up extra soy milk, so he used 1cup soy milk, and then 1 cup Almond Milk (from 'Almond Breeze', unsweetend kind).

Once agian thank you- wonderful recipe and wonderful panackes.
And they cooked all the way through no problem, you just have to keep the pan temperature around medium.

yeah great recipe. I had mine with banana in rum syrup on shrove Tues, they were quick and easy and tasted fab. who needs eggs eh!

I made these for my omnivorous family and they loved 'em!
Only thing is that we could only eat two little ones each -- SO filling.
I made one with oil in the pan and it came out really bad so I used margarine instead and they turned out fabulous.

So nice to see a recipe not calling for Ener-G, because I have no access to it. 

These turned out FABULOUS!!  I used about half the baking soda, and I added one mashed up banana, and a tablespoon or so of cocoa powder.  Yay, choco-banana pancakes!!  Sooooooooooooooooooooooo good.

I made these this morning with whole wheat pastry flour and they were still unbelievably fluffy!  Five stars!

YUM!  ;)b I love that this recipe does not call for egg replacer! I never quite have success for recipes mimicking egg use.  The ingredients are so accessible - all items you would basically find in your pantry. These were the best pancakes I've made in 2.5 years; other vegan pancakes I've tried didn't really cook on the inside and always tasted so very rubbery.  :)>>> Thank you!! I will continue using this!! Ohh, and adding chocolate chips makes is wonderful - tastes like a big, fresh baked cookie!
