Easy Pancakes

What you need: 

2 1/2 cups all purpose flour
2 tablespoons sugar
2 tablespoons baking powder
1 tablespoon vegetable oil
1 teaspoon salt
2 1/2 cups nondairy milk or water
dash cinnamon, optional

What you do: 

1. Lightly mix all ingredients in a fairly large bowl; leave 5-10 minutes to rise. It's important only to mix the batter enough to moisten, as overmixing will make the pancakes tough.
2. Gently fold down; leave again for 5-10 minutes if you have the time, and gently fold down again. (I don't usually bother, since everyone's starving!)
3. Cook over medium to medium-high on an oiled skillet until golden, carefully breaking apart any large lumps with the spatula. Serve immediately.

SO HOW'D IT GO?

Oh. My. Goodess. These are the best pancakes ever. I subbed in a tablespoon of lemon juice for a some of the soymilk, and added a bit of lemon and orange zest. I also made an orange syrup for them, and they turned out light and fluffy- perfect! Thanks!

try this variation:

half spelt flour
half corm meal
sub almond milk for soy
top with walnuts, banana slices, and agave nectar!!

delicious!

These were the best vegan pancakes I've ever made!  My meat-eating family liked them as well!

I've been vegan for eight years, but I've just now started actually cooking. These pancakes are absolutely amazing. Why would you make pancakes from a box when it's so simple to make them from scratch, vegan or non vegan? I added vanilla and almond extract and cinnamon, as well.

I've made these twice now. They're really good-- I used melted coconut oil for the oil in the recipe as well as for cooking. However, the further along in the batch I get, the longer it seems to take them to cook. Not sure what's up with that. Still, it's a great recipe. They're great even cold!  :)

I just made these, only I halved the recipe, I put in one teaspoon of vanilla essence and just under half a teaspoon of cinnamon, (although I'd probably do a little less next time), and these were amazing!  My mum and my grandad (who is 79 and has very little time for "all that 'vegetarian nonsense', meat and dairy is there to be eaten") both absoutely LOVED these!  My grandad couldn't stop singing their praises!

These were absolutely delicious!  Although my only thing I can say is I had to cook mine on a really low heat, but this may be because of my mother's weird hob that seems determined to cook everything as quickly as possible, but on the scale of 1-9.5 I had to cook them on 3 because on 5 they burnt, and quickly.

Try substituting 1/2 cup of ground flax for 1/2 cup of the flour :)  Yum!

Yum, I made these for brunch last week and they were great!  I added vanilla extract and cinnamon for a bit more flavor.  They were pretty dense, but I think my compulsive stirring is to blame so I'll try to go easy on that next time.  Ack I'm getting hungry just thinking about the sweet pancakey goodness...
