Easy Pasta and Tofu Throw Down

What you need: 

half a bag of pasta, or however much you'd like
half a block of regular extra-firm tofu
whole small onion
half a bell pepper
2-3 fresh garlic gloves
tomato sauce...as much as you have left over
spices...oregano, red chili pepper, basil, etc

What you do: 

Start boiling water...
Mince garlic, dice onion and bell pepper...add a little bit of oil to a pan and start cooking.
Cut tofu in your preferred size, I like to make my tofu into small 1/4 inch squares, making them about the same size as the onions and bell pepper pieces...but it doesn't really matter.
Add pasta to boiling water...
Once garlic, onions, and bell peppers are starting to get a little soft add the tofu and any other spices you think will go nicely...I like to add oregano, red chili pepper, and sometimes rosemary or basil.
When the tofu, onions, and peppers have browned a little, turn off heat and add tomato sauce.
Combine tofu with pasta and enjoy.
Note- this recipe is extremely flexible, and really not something you should go out of your way to make, rather something that is extremely convenient and easy and a way to make pasta more than just pasta.
