Easy Peace Loaf

What you need: 

1 (14 ounce) package vegan ground beef (I use Gimme Lean Ground Beef Style)
1 cup rolled oats
2/3 cup organic ketchup
3/4 cup onion, finely chopped
1/2 cup parsley, finely chopped
1 teaspoon ground thyme
1/2 teaspoon salt
1/2 teaspoon chili powder
2 tablespoons light olive oil
olive oil, for greasing

What you do: 

This is a modified recipe and has been tested on recent ex-meat eaters who love it.
1. Preheat oven to 350 F. Mix all ingredients in a large bowl. Mush it together with your clean hands so that its well mixed, but not over mixed.
2. Lightly grease (with olive oil) a 9 x 5 inch loaf pan. Place the mixture inside and form a loaf.
3. Bake for 35-45 minutes, until a knife inserted in the middle comes out clean. Since this has very little oil in it, you might want to put some tin foil on top so it doesn't dry out, or spread 1/4 teaspoon of oil right on the top. Check the middle after 30 minutes.
Serve with gravy, peas, and mashed potatoes. I served this to a man who went vegan on MeatOut (March 20, 2005), he could not believe it is vegan.

I have been searching for a good "meat" loaf recipe for a long time!!  This was awesome!  ;)b  Thank you for sharing! I followed the recipe exactly except I used 2 T dried parsley instead of fresh.  I also baked it covered for 40 minutes and then 10 minutes uncovered and it came out great!  My meat-eating hubby was impressed  ;D  We'll be making this again for sure.

Delicious.  I use the sausage gimme lean and it comes out good.  I also add diced red bell pepper and frozen corn.  I love this leftover as a sandwich the next day!

This is freaking awesome. I made a half batch, omitted the parsley and used boca crumbles. It was SO easy and absolutely delicious. I ate over half the loaf right away!

The only issue that I had was that it fell apart quite a bit when i tried to slice it. I wonder if this was an issue with too little moisture, or if perhaps the Gimme Lean faux beef holds together better. Either way, the taste was fantastic enough - and the recipe was easy enough! - that I'll definitely be making this again, regardless of whether or not I can try it with your variety.

My husband and I both really enjoyed this dish! Made it exactly according to the recipe, covered it with tinfoil but baked it for 50 minutes. The ketchup gave it a sweeter taste and the texture was great! I'll make it again. Thanks!

This was good, 5 stars! I made sandwiches with it - two slices of this loaf, plus tomatoes and mustard. Served it with roasted potatoes, steamed green beans, and roasted carrots. I accidentally bought the GimmeLean sausage style (not beef style), but it was still great. I used basil and oregano for parsley and thyme based on what I had. I ran short on ketchup - only had about half what was needed - but it was still good. (Wish I had the full amount, though.) I left out the olive oil, which seemed fine. This was only like 1.5 inches tall in my loaf pan. I might make a double batch next time and fill it higher, then bake it longer. Also want to try it with the right kind of GimmeLean!

I made a lot of additions to this recipe:  I replaced the catsup with a combination of tamari, mustard, and maple syrup.  I also added diced zucchini, diced squash, and shredded carrots to the mix.  I also added some chia seeds and some sesame seeds for a little crunch.

I fixed this on Sunday since it looked like a super easy recipe and figured since it uses GimmeLean, it would hold its shape well (rather than being all mushy). I made it as specified, using quick cooking oats and adding chopped green bell pepper along with the onion. Turned out well! Pretty tasty (from the ketchup) and very meaty texture. I'd made a regular beef loaf for my bfriend, so he was unable to taste the peace loaf (and honestly, I am not sure if he would have been willing to taste it anyway). It made for a couple days lunches for me..which was great!
