Easy Peach Cobbler

What you need: 

1 cup all purpose flour
1-1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup sugar
1 cup plain soymilk
dash of cinnamon
1/4 cup vegan buttery spread
1 16 oz. bag frozen peaches

What you do: 

Preheat oven to 350 degrees Fahrenheit.
Thaw peaches and reserve the juice.
Put all dry ingredients in a bowl. Add the soymilk and a dash of cinnamon. Mix the batter until all ingredients are incorporated.
Meanwhile put the vegan buttery spread into a 8"x8" glass baking dish. Put the dish into the oven to let the margarine melt completely.
After it is melted, take the dish out of the oven and pour the batter on top of the margarine. Spoon the peaches and juice on top of the batter.
Bake for 35-40 minutes. The batter will rise up around the peaches.
Let it cool after taking it out of the oven. I find it tastes better after it has cooled. Enjoy!

SO HOW'D IT GO?

I have now made this recipe with fresh peaches three times and apples six times. I've had a LOT of apples this fall. Excellent every time! I've been spreading out the cobblers to the ominis at work and they really enjoy them.

Bought this dessert to my book club meeting yesterday, I'm the only vegan. Everyone enjoyed it with some Soy Delicious vanilla ice cream. ;)b

I made this the other day and found that it is much better the next day straight out of the refrigerator.  All in all it is really good and I will make it again.  Thanks for the recipe!  :)

I just had two servings!!! This was so easy to make, very yummy, and I already had all the ingredients in the fridge. I think next time I'm going to experiment with a different kind of fruit, maybe frozen mixed berries. And next time I'll make sure to have some soy ice cream on hand to go with it.

Yummy! I made this with nectarines and added 1/2 cup oatmeal. I cooked it for 45 minutes and it was still a little runny in the middle, but I didn't mind. Definitely a sweet treat.

Very quick and easy. Too much fat and sugar to be healthy, but I justify it because it has fruit in it. ;) We like it enough to have had it a couple of times. Our favorite way to eat it is with a dollop of homemade Cashew "Clotted" Cream.

I was drawn to this recipe due to having all the ingredients on hand and it being simple.  I used 1/8cp butter and it worked out fine.  There was much more breading than expected so next time I will either add more peaches or reduce the batter.  All in all I'll have this again.  If anyone was wondering (using 1/8cp Butter) comes to 4pts per serving. ENJOY!!!!
