Easy South Western Tomato Soup

What you need: 

1 (14 ounce) can diced roasted tomatoes, undrained
2 cups plain nondairy milk (I use soy)
1/2 cup corn
1/2 teaspoon basil
1/2 teaspoon thyme
1 teaspoon salt and pepper
2 shakes hot sauce, optional (I use Tabasco)
1/2 cup cilantro, chopped
tortilla chips, to serve

What you do: 

1. In a medium sauce pan, combine the undrained tomatoes, milk, corn, hot sauce, and spices and bring it to a boil.
2. Add cilantro, and let it cook for about 5 minutes. Serve with tortilla chips crushed on top.
It's that simple!
Source of recipe: I was feeling sick and watching the food channel, and really wanted something hardy to fill my stomach.

Yeah that sounds good  , will someone put herbs on here.

Pretty good.  I added some black beans & garlic.  Gave it a little more flavor, but the base of the soup is fantastic :)  Think I also may try it served over quinoa instead of tortilla chips :)

Wow, this sounds really good! I just bought some organic basil today, and I was looking up recipes. I am going to save this one to use later. Thanks!
