Easy Spicy Seitan Chili

What you need: 

 

1/2 medium white onion, diced

2 stalks celery, diced

3 tablespoons vegetable oil

2-3 cloves garlic, minced

1 - 8 oz. package ground seitan (I use Upton's Naturals Chorizo Ground Seitan)

1 - 15 oz. can diced tomatoes(do not drain)

1 - 6 oz. can tomato paste

1 - 15 oz. can  kidney beans (drained)

1 - 15 oz. can  black beans (drained)

1 - 14.5 oz can mixed vegetables (drained)

1 package vegan chili seasoning mix

1/4 teaspoon cayenne pepper

1/2 cup water

Salt and pepper, to taste

What you do: 

 1. In a large pot, over medium heat, add oil, onion, and celery. Saute for 5 minutes. Add garlic, saute for 2 minutes. Crumble in ground seitan and cook for 3 minutes.

2. Lower heat, add diced tomatoes, tomato paste, kidney beans, black beans, mixed vegetables, chili seasoning mix, cayenne, and water. Stir, raise heat to medium, heat thoroughly until it begins to bubble.

3. Lower heat, cover, simmer for 1 1/2 hours, stirring occasionally.

Top with Toffutti Better Than Sour Cream, vegan cheese, and green onions. It's also tasty with a little hummus :)
