Easy Spinach Couscous with Mushrooms and Pine Nuts

What you need: 

1 cup pearl couscous

1 large scallion

5 large white mushrooms (or more if you like!)

1 1/4 - 1 1/2 cups veggie stock

2 tablespoons pine nuts

1-2 handfuls spinach

olive oil

salt to taste

 

 

What you do: 

1.) In a medium saucepan, toast the couscous for a few minutes in 1 tablespoon of olive oil.  While couscous is toasting, roughly chop the scallion and mushrooms. 

2.) When couscous is toasted, add chopped mushrooms, scallion, and vegetable stock to couscous.  Bring to a boil.  Cover and cook on low heat for about 10 minutes. 

3.) While couscous is cooking, add spinach and 1 tablespoon of pine nuts to a food processor or blender.  Begin processing and add enough olive oil to make a thick sauce. 

4.) Add the spinach sauce and additional tablespoon of pine nuts to cooked couscous.  If needed, add salt to taste. Enjoy!!!!!

This recipe is easy with minimal ingredients and super tasty!  I was playing around with ingredients I had on hand and came up with this recipe!

 

Total preparation and cook time:  20 min.
