Easy Thai Green Curry

What you need: 

1 tablespoon green curry paste
3 cloves garlic, minced
olive oil, as needed
1 (13 1/2 ounce) can unsweetened coconut milk
1/2 pound firm tofu, cubed
2-3 cups green beans, chopped

What you do: 

1. Fry curry paste and garlic in a little bit of oil over medium heat in a large skillet for about 3 minutes, or until garlic and paste become very fragrant.
2. Add coconut milk, tofu, and green beans.
3. Simmer for about 5 to 10 minutes, to allow tofu to soak up the flavors.
Spoon over basmati rice.

SO HOW'D IT GO?

I modified this, but it was still great!  I used a mix of cauliflower, broccoli, and onion instead of green beans.  I also poured over soba noodles instead of rice.  I thought it was a bit rich, so next time I'd probably cut the coconut milk with something.  I would add more vegetables or less coconut milk next time.

icephrosty, props to you for making your own curry paste. Recipes I've looked at all include ingredients I never have, so I've never made my own  :P

I might try something similar to this.. the recipe as is would probably serve 2 for my house (heh heh..) so a T of curry pastiness would be too much, I think. I shall report back.

Wow - I never realized how spicy green curry powder is (at least the one I have)!  I've always used paste from a jar, but last night I got ambitious and decided to make my own.  It was tasty, but a tablespoon seemed like way too much!  It was so hot that I went through a box of tissues while eating it.  I'll try this again, but I need to make it a little more wimpy...
