Easy Vegan Chocolate Cake

What you need: 

3 cups flour
2 cups sugar
6 tablespoons cocoa powder
2 teaspoons baking soda
1 teaspoon salt
2 cups water
3/4 cup vegetable oil
2 tablespoons vinegar
2 teaspoons vanilla

What you do: 

1. Preheat oven to 350 degrees F.
2. Thoroughly mix dry ingredients first (flour, sugar, cocoa powder, baking soda, and salt).
3. Mix in wet ingredients (water, vegetable oil, vinegar, and vanilla). Continue mixing until you obtain an even batter (no lumps).
4. Pour into a cake pan and bake for approximately 40 minutes.
I recommend topping the cake with Chocolate Frosting by Sarah.

I made this into cupcakes and they all sunk and were pretty dense.  So I served them overturned and topped with fruit compote!  Delicious.  Not terribly sweet and very chocolatey.  I'm not sure that I'll try it again though.

made this today for a friend's birthday and it has turned out great!  i didn't have any cider vinegar or lemon juice, but found some brown rice vinegar so i thought i'd give that a try.  i didn't use too much as it's quite strong.
think my oven was too hot though, as the cake cracked on the top!  however, once i've sliced that bit off, and iced it, i don't think anyone will know!  :D

OH WOW. I made this today and it is SO SO SO SO rich! Makes my tummy feel gross but it was delicious and I will make it again and again and again~ Family loved it, too.

I'm wondering - has anyone tried this with Stevia instead of sugar?

2 cups of sugar is ~1500 calories! Stevia has no calories (and I use it in all my drinks now) and I've been thinking about trying it out w/ food. If no one has - I'll totally do it and let everyone know how it came out!

Ok I did some math, these are the ingredients that have noteable calories:

What I'm thinking - is 1548 (15%) of calories can be dropped using the Stevia. Also - I'm a big fan of using babyfood applesauce in exchange for Oil in cakes/etc. I've never had a cake come out dry doing that. So that's another 16% of calories, which is 31% of calories. (not to mention almost all the fat.....). Or maybe using just 1/3 cup of oil and the rest apple sauce to kind of meet in the middle.

I dunno, I'm bored at work hahah

p.s. Using coffee sounds like an incredibly intense and great idea.

CAKE IS NOT DIET FOOD.  JUST LEAVE IT BE!

Well and truely the best cake I have ever eaten in my life. I thought about not posting a comment as there are already 5 pages worth of comments but it is true... This is the best cake in the world. It was incredibly good. I didnt realise that food could be THAT good. but it really is. AND EASY TO MAKE. Mine did actually take a little longer than 30-40 mins to cook. Shows how variable ovens and cake tins are!

I must echo the praise of everyone here.  This cake was beyond successful with everyone.  When my labmates heard I was bringing a vegan cake, they were scared.  But after they ate it, they were totally impressed.  "How did you get it so moist and delicious without eggs??"  Haha, if you have enough oil, you can do anything.  :)  I made this in two rounds so I could layer it, and frosted it with this frosting: http://vegweb.com/index.php?topic=5707.    Oh, and I added semi-sweet chocolate chips and let them settle on the bottom of the pans before baking, so there were sort of 'fudgey' layers.  The bottom of the cake stuck because of the chips, but I got the cakes out and you couldn't tell the bottoms were uneven.  It was fine.

I think it's one of the best, moistest, chocolatey-est cakes I've ever had.

Made this before but yesterday I decided to make it again, with a twist:  I put a couple of drops of peppermint essential oil in the batter.  I also made chocolate frosting and flavored it between the layers with more peppermint.  Hubby thinks it's too minty, but I love it!  FANTASTIC RECIPE!

This recipes was great. I made it today for my daughter's birthday party. We had a small party with just family and I was the only vegan. Everyone loved it. In fact, my mother in law and my sister in law's hubby asked if they could take some home. I did cook it a little long. I set the timer for 35 minutes, and my husband checked it about 3 minutes before the timer went off and it was, not burnt, but could have been taked out of the oven a few minutes sooner. Thank you for the recipe. I am just loving this web site.  :D
