Easy Vegetable Soup

What you need: 

1 quart good vegetable stock
3 large carrots, scraped
2 turnips, peeled
1 parsnip, peeled
1 onion
1 med tomato
3-4 stalks celery
1 medium sweet green pepper
4 oz (100 gr) oyster mushrooms in strips
1 tablespoon miso (optional)
2 cloves garlic (optional)
2 tablespoons olive oil

What you do: 

Clean and chop all vegetables.
In heavy soup pot, saute onion, garlic and pepper in oil until it collapses and starts to colour; add celery and continue to sauté until celery is partially cooked.
Add remaining ingredients, cover and bring to a boil, reduce heat to a simmer.
Cook slowly until vegetables are tender.
Correct seasoning to taste and serve with crusty wholegrain bread.

what color miso would u recommend?

Whatever you have and like. I use white, mostly, but red is good too.

Wow, this was so good!  ;D I changed it a little, because I didn't have turnips, parsnip, or green peppers, and I don't like mushrooms. I added 3 potatoes, 1/2 of bragg's liquid aminos instead of miso, a package of bowtie pasta, 2 stalks of celery (it was all I had), I used the garlic, some thyme, salt, and pepper. I didn't have enough veggie broth either (man, I need to go shopping!  ;) ), so I added 2 cups of water. It's still really good though! Thanks for the recipe! :)

This is seriously the best Veggie soup Ive ever had. It is so easy to make, but it is so delicious. I also made The Outrageously Big Bread with this. It was so good. Thank you!!!!!  ;D ;D
