Egg McMuffin with Sausage

What you need: 

1 package extra firm tofu
1 tube of soy sausage of your choice or already made soy sausage patties
1 package of Toffutti American vegan cheese
Vegenaise (or your choice of vegan mayonnaise!)
english muffins
1 package scrambler mix (Fantastic is OK, but I prefer the little packages they sell at
Whole Foods)

What you do: 

This is delicious! My boyfriend and I crave/make this all the time (sometimes, admittedly, not just for breakfast).
For best taste, I recommend marinating as many slices of tofu as you'd like in the scrambler mix overnight. Just cut the tofu into thin squares and place it into the scrambler mix -- let sit in the refrigerator overnight. Howe'ver if this is too much planning, plain tofu will work!
First if you are using tubed sausage form patties using your hands and cook in pan until tenderness or crispiness you desire is reached (I usually cook mine for about 5 minutes!)
Then do the same with the marinated tofu, but it only needs a couple minutes for each side.
Toast the English muffins and spread Vegenaise on each side (this provides more flavor and I happen to love Vegenaise). Next simply stack the sausage, tofu, and Toffuti slice and put the sandwich together.
We usually microwave them for about 10 seconds after just to melt the vegan cheese a bit!
