Eggless Tomato Omelette

What you need: 

1 cup gram flour (chickpea flour)
1 onion, finely cut
1 tomato, finely cut
1 tomato, sliced
1/4 teaspoon baking soda
3 teaspoons oil
turmeric powder
chili powder
salt

What you do: 

* Mix gram flour, tomato, onion, turmeric powder, chili powder, oil, salt, baking soda and water into a medium thick batter.
* Heat a skillet (tava), smear it with oil, spread the batter and place a tomato slice in the centre.
* When cooked, pour a teaspoon of oil over it and flip it over.
* Cook until done.

SO HOW'D IT GO?

;)b Omg, I just made this for breakfast and it is so good!  Ever since I made the switch from vegetarian to vegan I have really missed having something that *isn't* sweet for breakfast.  This is a great sub for an omelette, but it is totally its own thing.  I think I might even like it better than eggs.  You could add anything to this.  Next time I will def be adding some jalapenos for some extra zing.  And I will be making this a lot.  Thanks!

How much water do you use? It's not in the ingredients list.  I am assuming it should be about like pancake batter and will probably have experimented with it before this gets a reply anyway....    ???

It's also called chick pea flour.  I've been making this for a few weeks and we love them.  My husband is from south India and grew up eating these.  It's my favorite egg-like recipe.

This sounds good.  I am having trouble finding gram flour.  Does anyone know if Whole Foods carries this?  Can it be subbed?

you might also see it under the name 'besan flour', i'm pretty sure that bob's red mill makes some that i've seen at whole foods. (in the baking section by the other bobs red mill products)

To the user above: You should be able to find it in your local Indian grocery (if you have one) otherwise, I am not sure, sorry.

To the recipe poster: Thank you for posting this! In my pre-vegan days I loved eating eggs for breakfast. I've since replaced this with tofu. I may have to limit my soy intake for personal health reasons, so I am glad to have an alternative when I do! I will try this asap and let you know how it turned out.
