Eggnog

What you need: 

1 banana
1 cup almond milk
1 tsp agave nectar
1 tsp vanilla
1/2 tsp cinnamon
1/4 tsp nutmeg
spiced rum or brandy (optional)

What you do: 

1. In a blender, combine banana, almond milk, agave nectar, vanilla, cinnamon, and nutmeg.

2. Cold Option: If you prefer it cool, add alcohol to the blender and mix.

3. Warm Option: If you prefer it warm, place in saucepan over low-medium heat; heat until warm. Pour in glass and add spiced rum or brandy, if desired.

Serve and enjoy!

SO HOW'D IT GO?

I altered the recipe a bit. I added pumpkin spice along with the other spices. I don't drink alcohol so no rum or brandy was added. I sub agave nectar with raw honey.  It's better if the eggnog is cooked on medium hit and watched over. Also I doubled the ingriendents so I can enjoy it longer. So far so good. Excellent!

It was very good! I forgot the agave nectar though....oooops!!!  I used plain soy b/c I didn't have almond milk on deck. So I put 1/8 teaspoon almond extract. I also added 4 raw cashews :)

A large banana was a little too much for me, so I'll use either a small banana or half a large from now on, but this was very good and settled my husband's eggnog craving as he goes through his first Christmas as a vegan.
