Eggnog

What you need: 

20 ounces silken regular or low-fat tofu
16 ounces vanilla nondairy
1 tablespoons vanilla extract
1/4 cup sugar
2 tablespoons brown sugar
1/4 teaspoon ground turmeric
1/2 to 1 cup rum or brandy
Nutmeg (optional)

What you do: 

1) In a blender or food processor, combine all ingredients except nutmeg; blend thoroughly stopping occasionally to scrape down sides. Serve well chilled and dusted with nutmeg.

SO HOW'D IT GO?

Maybe it's the kind of silken tofu I used (Vitasoy water-packed), but this had a strong soy taste that distracted from the yummy vanilla, nutmeg and rum flavors I associate with 'nog.

Have you ever tried thickening it another way, by condensing the soymilk on the stovetop or using a creamer instead?
