Emily's Soyrizo Sandwich

What you need: 

2 slices sourdough bread
1 to 2 ounces vegan chorizo (I use Soyrizo)
1/2 small Japanese eggplant, chopped
1/2 small zucchini,chopped
1 tablespoon vegan mayonnaise (I use Vegenaise)
1/4 avocado
1 tablespoon olive oil

What you do: 

1) Toast sourdough bread.
2) Over medium heat, put olive oil in a medium sized pan. Add eggplant, zucchini, and vegan chorizo. Cook for 5 to 8 minutes.
3) When bread is done toasting, spread vegan mayonnaise on both pieces. Then take fresh avocado and spread on one slice of bread. Put the cooked veggies and soyrizo on top the avocado. Close sandwich, cut in half and enjoy!
Source of recipe: I had these ingredients in my fridge and this is what I came up with!
