EmilysTasty Low-Fat Blueberry Muffins

What you need: 

2 cups wheat flour
1/2 cup packed brown sugar
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1/4 cup egg substitute, beaten (http://vegweb.com/index.php?topic=7678.0)
1 cup applesauce
1 tablespoon oil
1/4 cup blueberries

What you do: 

1. Preheat oven to 375 degrees F. Mix the dry ingredients well.
2. Make a well in the middle of the dry ingredients. Whisk the egg substitute, apple auce and oil. Add to dry mixture.
3. Carefully fold in berries (make sure to pop a couple while folding for a little more wetness). Spoon into muffin tin.
4. Bake for 25 minutes. Let cool and enjoy!
Very low-fat.

SO HOW'D IT GO?

I made these this morning and have just eaten the first. This recipe is great! They were really easy and quick to make, and I followed what dragana said and mixed it for quite a while and the dough came out just fine. I also stuck loads more blueberries in, but that's just a personal preference :D

i didn't have any ener-g egg replacer on hand, so i improvised and just used another half a cup of apple sauce.  the muffins turned out deeeeeeeelicious!  they were super moist and just plain wonderful!  i'm definitely going to make these again!
