Even Husband Likes it Granola

What you need: 

5 cups quick oats (they work best)
1 1/2 cups oat bran
1 cup ground flax seed
handful of sliced almonds
handful of chopped pecans
1 cup of unsweetened coconut
1 cup of olive oil
1 cup of maple syrup
teaspoon real vanilla extract
1 teaspoon cinnamon

What you do: 

Preheat oven to 350F.
In a large bowl combine oats, bran, flax, nuts, coconut, and cinnamon. Mix well with hands.
In a separate bowl, mix together olive oil, syrup, and vanilla. Pour over dry ingredients. Mix everything very well so it's all coated.
Spread out on 2 baking sheets and bake 25-30 minutes or until golden brown. Let sit out at room temperature for awhile so it cools.
This is the best granola I have ever had, and actually keeps me going until lunch. Also makes a killer late night snack mixed with vanilla soy ice cream. Enjoy!

SO HOW'D IT GO?

This is the first time I've made granola.  I didn't have enough maple syrup, so I added some agave nectar to equal a cup.  I was a little worried when I tasted the unbaked mixture that it might be too sweet, but somehow baking it seemed to fix that.

I put one baking sheet on a lower rack (because there wasn't room on the top) and thought, I'll just switch them halfway through - not a good idea because the bottom pan was burned.  Don't do it!

The half I made correctly came out *delicious.*
