Excellent Corn Bread

What you need: 

1/2 cup whole wheat flour
3/4 cup white flour
3/4 cup polenta or regular corn meal
4 tablespoons sugar
5 teaspoons baking powder
1/2 teaspoon salt
1/3 cup + 2 tablespoons baby food apple sauce
1/2 cup low fat nondairy milk (I use soy)
1/2 cup water

What you do: 

1. Preheat oven to 375 degrees F. Mix dry ingredients in a bowl. Mix wet ingredients in another bowl. Add wet to dry and stir well.
2. Bake in a glass 9" round pan or a 8x11" pyrex for about 30 minutes, or until top starts to look golden brown.
3. Serve under spicy beans, or warm with maple syrup.
We've had it for every meal or snack for the last 2 days!!'

SO HOW'D IT GO?

This turned out great!  I used Teff flour instead of the wholewheat (I'm sure you could use somthing like buckwheat or another gluten-free flour) and only 3 tbsp of sugar.  Delicious!  Thank you for sharing :)

I used 2 teapoons of BS and 2 teapoons of BP for this recipe instead of the 5 tsp of BP that was originally called for. It turned out ok. A bit bland for me. I'll probably mess around with it a bit more to make it suitable to my liking.
