Fagioli Neri

What you need: 

3 cups cooked black beans, drained
3 cups tomato sauce of your choice
1 large onion, chopped
2 cloves garlic, crushed
2 cups chopped oyster mushrooms
2 teaspoons parsley
1 teaspoon ground cumin
1 teaspoon oregano
chili flakes to taste (optional)
3 tablespoons olive oil

What you do: 

Heat oil in skillet and sauté onion and garlic until it starts to colour.
Add mushrooms and toss until soft.
Add spices; when fragrant, add beans and tomato sauce and blend well.
Cook until mushrooms are tender.
Serve over pasta, a plate of home fries or brown rice.

SO HOW'D IT GO?

mmmm I love black beans! this is an EXCELLENT recipe. my first time cooking with oyster mushrooms!  i halved the recipe, and that made more than enough for me and my husband (served with rice). I forgot the chili flakes, and I will definitely add that next time and also some freshly ground pepper.  I think this would be really good with mashed potatoes and I cannot wait to make this again. definitely a 5 star recipe- simple, fast, and deelicious.  thanks!
