3 cups cooked black beans, drained
3 cups tomato sauce of your choice
1 large onion, chopped
2 cloves garlic, crushed
2 cups chopped oyster mushrooms
2 teaspoons parsley
1 teaspoon ground cumin
1 teaspoon oregano
chili flakes to taste (optional)
3 tablespoons olive oil
Heat oil in skillet and sauté onion and garlic until it starts to colour.
Add mushrooms and toss until soft.
Add spices; when fragrant, add beans and tomato sauce and blend well.
Cook until mushrooms are tender.
Serve over pasta, a plate of home fries or brown rice.
