2 15 oz cans of small red beans (or red kidney beans) drained and rinsed
1 large onion
2 cups of water
4 cloves of garlic, pressed
1 tsp allspice
½ tsp cinnamon
2 tablespoon tomato paste
1 15 oz can fire roasted diced tomato
2 tablespoon sugar
Sauté onion and garlic in a covered pan with a little water.
Add diced tomato and simmer for five minutes.
Add all the other ingredients and bring to a simmer for 15 minutes.
If you let it sit for a little time, the favors will come together better.
Serve will brown rice or your favorite rice.
Dry beans (1 pound) can be used but should be soaked overnight or boiled based on the direction on the package. After beans are drained and add to the other ingredients you need to increased the amount of water from 2 cup to 4 cups. This will need to cook (simmer) from 3 to 4 hours until beans are soft.
You can reduce the cooking time by pressure cooking all the ingredients for 30 minutes.
