Fettuccini Alfredo Sauce

What you need: 

1/2 package soft tofu
2 cups soy milk
2 cloves garlic
2 tblsp. olive oil
1 large onion (chopped)
2 stalks celery (chopped)
Wondra (or flour) for thickening
Salt and pepper to taste

What you do: 

Mince garlic or use a teaspoon of garlic pureé, onion and celery and add to large frying pan with oil and sauté until done. Remove from heat and add 4 tblsp. flour or Wondra to mixture. Stir to create a paste with veggies.
Blend soy milk and tofu until creamy in blender and add the onion/celery mixture to blender and blender until smooth. Return to heat and stir on stove until thickened.
Add more flour if a thicker consistency is desired. Pour over pasta, steamed veggies, or baked potato and serve. :)

this stuff is gross.. at first,it tasted like tofu straight out of the tub...so i added garlic and it was too much and then there's the consistency....it was slightly chunky(the veggies were minced) but that's all my blender can do..but the next day..it was ...the consistency of..oatmeal eww

I'm eating this right now!
I am an alfredo fanatic, and becoming vegan made me craaaaave it and I finally found a good recipe for it... except I added a lot more garlic and a bunch of veg parmasean cheese. I also ommited onions because I don't care for them and I didn't understand why the celery was there so I didn't use that either.

This is really good.

this is delicious!! I used cocunut milk instead of soy milk and added some portabella mushroom. ^_^

Relatively easy recipe, tasted a little milky, but after added a lot of salt, pepper, and garlic much tastier.  Recommend whisking the sauce when thickening it.  Didn't add celery cuz i didn't have any but added just a little nutritional yeast and shredded some veg mozzarella to top of pasta and sauteed veggies.  Made enough for tomorrows lunch and will definitely make again.
